Cheneys nordische Ausbildung zeigt sich in Konservierungstechniken für sorgfältig ausgewähltes Gemüse, gesammelte Pilze und Meeresfrüchte; britische Einflüsse sind ebenfalls spürbar. Ein Scotch Egg aus Wachteleiwurst mit einem weich fließenden Wachtelei im Kern ist ein Beispiel. Die Signature-Nudeln aus Steckrübe mit Schweinefett und buttriger Sabayon zeigen das Können der Küche bei Gemüse.
