<body>The Xiqiao big cake is a traditional baked cake of Xiqiao in Nanhai, Foshan. Tradition dates it to the Hongzhi reign of the Ming: Fang Xianfu, a Xiqiao man who rose to minister of personnel, once had no time for breakfast before an early audience, so he had the family cook knead leavened dough with eggs and sugar and bake it into a large cake. His colleagues praised it and it took the name of his home town. When Fang retired to Xiqiao to teach, he passed the method to the mountain villagers, and the cake spread from there.[^s1][^s2]&#xA;&#xA;## Method and character&#xA;&#xA;Low-gluten wheat flour is kneaded with fresh yeast starter and water and left to rise for about a day. Sugar is worked into the risen dough to make the base. Separately, flour, lard, cooking oil and an alkaline solution are kneaded into a batter, which is combined with the base, rolled into a long log, divided into balls and pressed into rounds. The tops are dusted with flour and baked at medium heat; after cooling they are dusted with cooked wheat flour. The cake comes out as broad as a full moon, white tinged with sand-pear yellow, never scorched, soft, sweet and melting in the mouth.[^s1]&#xA;&#xA;## Custom and transmission&#xA;&#xA;Xiqiao families give the cake at weddings, on visits and at New Year: leavening puns on “adding sons”, the sugar stands for sweetness, and the round shape for reunion under a full moon; the first cake sent by the groom’s family counts as the betrothal cake. The craft entered the third district-level list in Nanhai in November 2010 and the fifth municipal list in Foshan in September 2015.[^s1]&#xA;&#xA;[^s1]: Nanhai District Museum, Foshan, “西樵大饼制作技艺”.&#xA;[^s2]: Foshan Online, “《樵山叙岭南》④ | 樵山藏佳趣，草木载乡情”.</body>
