<body>Lee Kum Kee is a Hong Kong sauce company, founded in 1888 by Lee Kum Sheung in Nanshui, Xiangshan county, Guangdong (Nanshui in Zhuhai today). Lee Kum Sheung ran a small eatery cooking oysters; the story goes that he once forgot to turn off the stove, the oyster liquid in the pot reduced to a brown concentrate and tasted excellent, and he turned this into a way of making oyster sauce, opening the Lee Kum Kee oyster sauce shop.[^s1][^s2]&#xA;&#xA;## Macao and Hong Kong&#xA;&#xA;A fire in 1902 destroyed the shop, and the family moved to Macao to rebuild. In 1920 Lee Shiu-nan of the second generation took over, improved production and sold oyster sauce and shrimp paste to North America. In 1932 the company opened a branch in Hong Kong and moved its headquarters there.[^s1]&#xA;&#xA;## Expansion&#xA;&#xA;Lee Man-tat of the third generation became chairman of the board in 1972; that year, as relations between China and the United States thawed, the company launched the cheaper Panda brand oyster sauce to open the American market. An office opened in Los Angeles in 1983 and a plant in the City of Industry, California, in 1991; a large production base was built at Xinhui in Guangdong in 1996. In 1992 the company entered Chinese herbal health products with the First Military Medical University, the business later known as Infinitus.[^s1]&#xA;&#xA;## Products and present day&#xA;&#xA;From two products, oyster sauce and shrimp paste, the range grew to more than two hundred: oyster sauce, soy sauce, [[concept_xo_sauce|XO sauce]], ready-to-use recipe sauces, chilli sauces and dipping sauces, sold through a network covering more than a hundred countries and regions.[^s1][^s2] The group has production bases in Hong Kong, Xinhui and Huangpu in Guangdong, the United States and Malaysia.[^s2] The Lee Kum Kee Group set up a new governance structure in 2022 with Sammy Lee as executive chairman; the group covers sauces, Chinese herbal health products, growing and selling Chinese medicinal materials, property investment and venture investment.[^s3] In July 2017 the Lee Kum Kee Health Products Group bought the entire equity of 20 Fenchurch Street in London through a wholly owned subsidiary for £1.2825 billion.[^s1][^s4]&#xA;&#xA;[^s1]: Chinese Wikipedia, “李錦記”.&#xA;[^s2]: Lee Kum Kee, “About Lee Kum Kee - Corporate Overview”.&#xA;[^s3]: Lee Kum Kee Group, “關於我們”.&#xA;[^s4]: Wikipedia, “Lee Kum Kee”.</body>
