<body># Vespertine&#xA;&#xA;Vespertine is a contemporary restaurant in Culver City led by chef Jordan Kahn. It was included among the two-star restaurants in the MICHELIN Guide California 2025 and is also listed with two stars in the 2026 guide. [^michelin-profile][^stars2025][^guide2026]&#xA;&#xA;The restaurant occupies “The Waffle,” a striking futuristic building of red steel. Its bold, stark setting stages an unusually creative tasting menu. Each dish is visually striking and daringly inventive, sometimes whimsical, while showing precise technique and balanced flavours. Scallop with passionfruit, ají amarillo and horseradish-tuile petals is one example; another is a bowl dotted with edible flowers and finished with tomato water. A mesmerising dessert brings the meal to a close with kaleidoscopic flavours. Along with its sister restaurants, Vespertine works to use every part of each ingredient. [^michelin-profile]</body>

<body># Sons &amp; Daughters&#xA;&#xA;Sons &amp; Daughters is a contemporary restaurant in San Francisco led by chef Harrison Cheney. It was included among the two-star restaurants in the MICHELIN Guide California 2025 and is also listed with two stars in the 2026 guide. [^michelin-profile][^stars2025][^guide2026]&#xA;&#xA;Now in a roomier space, the restaurant feels even more personal and passionate. Cheney’s Nordic training informs a menu built around preservation techniques and carefully sourced vegetables, foraged mushrooms and seafood, with hints of his British roots. A Scotch egg made with quail sausage wrapped around a molten quail egg is one example. The signature rutabaga noodles, dressed with pork fat and buttery sabayon, show the kitchen’s skill with vegetables. Desserts are just as finely tuned, such as perry granita with whey caramel and rose geranium jelly. Impeccable service elevates the experience. [^michelin-profile]</body>

<body># Hilda and Jesse&#xA;&#xA;Hilda and Jesse is a San Francisco restaurant known for creative breakfast and brunch, run by co-owners Ollie Liedags and Rachel Sillcocks. Both bring extensive fine-dining experience, and each contributed a grandparent to the restaurant’s name. It was included among the one-star restaurants in the MICHELIN Guide California 2025 and is also listed with one star in the 2026 guide. [^michelin-profile][^stars2025][^guide2026]&#xA;&#xA;The winsome space recalls a modernist diner, and the hospitality is warm and cheerful. The cooking is not fussy or manicured; instead, it combines excellent ingredients and bold, brash flavours in dishes that are unexpected yet satisfying. The menu changes frequently and is not provided to diners, so each course arrives as a surprise. [^michelin-profile]</body>

<body># Holbox&#xA;&#xA;Holbox is a beloved counter inside Mercado La Paloma in Los Angeles. Chef Gilbert Cetina, who previously cooked with his father at the neighbouring Chichen Itza stall, draws on the coastal cuisines of Mexico. Holbox was included among the one-star restaurants in the MICHELIN Guide California 2025 and is also listed with one star in the 2026 guide. [^michelin-profile][^stars2025][^guide2026]&#xA;&#xA;The dishes look simple but deliver remarkable flavour, with seafood of exceptional quality and freshness. Highlights include vibrant aguachiles and ceviches, excellent tacos served on house-made heirloom corn tortillas, and expertly grilled lobster, all complemented by a range of distinctive house salsas. The menu changes frequently. A reservation-only tasting menu is offered on Wednesdays and Thursdays and is in high demand. [^michelin-profile]</body>

<body># Kiln&#xA;&#xA;Kiln is a contemporary restaurant in San Francisco where chef John Wesley and general manager Julianna Yang bring their talents together. It was included among the two-star restaurants in the MICHELIN Guide California 2025 and is also listed with two stars in the 2026 guide. [^michelin-profile][^stars2025][^guide2026]&#xA;&#xA;The warehouse space feels warm thanks to personable service, while the kitchen delivers artful creations. The tasting menu leans Nordic, using preservation techniques such as curing, drying and fermentation. Dishes may look simple, but they carry intricate technique and compelling flavour combinations. A crispy curl of puffed beef tendon captures the approach; squab breast glazed with burnt honey and served with truffled jus shows its classical side. [^michelin-profile]</body>

<body># Meteora&#xA;&#xA;Meteora is a creative restaurant in Los Angeles led by chef Jordan Kahn. It was included among the one-star restaurants in the MICHELIN Guide California 2025 and is also listed with one star in the 2026 guide. [^michelin-profile][^stars2025][^guide2026]&#xA;&#xA;Tangled greenery, moody lighting and a trance-like soundtrack make the space feel otherworldly and immersive. Kahn combines primal live-fire cooking with a zero-waste ethos and sustainably sourced wild and organic ingredients. Charred yam comes with a buttery sauce, smoked trout roe and grilled hazelnuts. Honey-grilled Sue Buxton scallops are paired with mustard greens, a plantain dumpling and burnt onion jus for balance. Drinks follow the same philosophy, from cocktails made without refined sugar to wild-harvested herbal teas and single-origin coffee. [^michelin-profile]</body>

<body># R|O-Rebel Omakase&#xA;&#xA;R|O-Rebel Omakase is a Japanese restaurant tucked into a modest shopping centre in Laguna Beach. Chef Jordan Nakasone leads the reservation-only counter, which has two seatings each night. The restaurant was named to the MICHELIN Guide California 2025 one-star selection and is also listed with one star in the 2026 guide. [^michelin-profile][^stars2025][^guide2026]&#xA;&#xA;The serene room feels far removed from the bustle outside. The menu balances tradition and creativity, with an emphasis on seasonality and excellent ingredients. Nigiri leans traditional, featuring delicacies such as yagara (red cornetfish) and nodoguro (blackthroat sea perch). Kitchen dishes show more flair, including rich chawanmushi topped with black cod and miso butter. Gracefully unobtrusive service rounds out the experience. [^michelin-profile]</body>

<body># 7 Adams&#xA;&#xA;7 Adams is a Californian restaurant in San Francisco, where chefs Serena and David Fisher lead an intimate tasting-menu kitchen. It was included among the One-Star restaurants in the MICHELIN Guide California 2025 and is also listed with One Star in the 2026 guide. [^michelin-profile][^stars2025][^guide2026]&#xA;&#xA;The thoughtfully designed room has a railway-car feel and an open kitchen, without feeling precious. The kitchen moves with calm purpose, allowing diners to watch without distraction. The seasonal menu reflects a distinctly Californian sensibility, grounded in strong technique and balance. Dishes are composed and deliberate: warm milk bread with house-cultured butter, handmade pasta with deeply flavoured sugo, and carefully cooked fish with broths and sauces that support rather than dominate. Desserts such as a refined Mont Blanc capture the kitchen’s approach, while service remains warm and attentive. [^michelin-profile]</body>

<body>## Administrative status&#xA;&#xA;Osaka Prefecture is one of Japan’s prefectures in the Kansai region. Its prefectural government is located in Osaka City.
