# Vespertine

The restaurant occupies “The Waffle,” a striking futuristic building of red steel. Its bold, stark setting stages an unusually creative tasting menu. Each dish is visually striking and daringly inventive, sometimes whimsical, while showing precise technique and balanced flavours. Scallop with passionfruit, ají amarillo and horseradish-tuile petals is one example; another is a bowl dotted with edible flowers and finished with tomato water.
