Ugo Chan presents Japanese cuisine through an open kitchen and two counters, with chef Hugo Muñoz blending seasonal produce with details from other cultures and imagery of Madrid's local dining, offering à la carte and bespoke omakase. [^profile2026] ## Overview A contemporary restaurant full of personality: an open kitchen in full view, two bars and a Japanese soul. The name comes from the nickname "Hugochan" given to chef Hugo Muñoz by his grandfather when he was a small boy; the concept echoes the Greek philosopher Heraclitus — "no one can bathe twice in the same river" — with a menu that keeps changing with the seasons. The MICHELIN Guide lists it among its Trending picks. [^profile2026] ## Dishes & Signatures - Japanese cuisine with seasonal produce as the protagonist, offered à la carte and as a made-to-measure Omakase menu - Nods to Madrid's culinary memory: gyoza filled with callos a la madrileña and the chef's version of Soldaditos de Pavía - Details paying tribute to emblematic chefs such as Martín Berasategui and Robuchon - A dish praised by MICHELIN inspectors: lentil "caviar" with wood pigeon in Japanese curry and coconut air ## Honors The restaurant is listed in the starred selection of the MICHELIN Guide Spain 2026; the star year follows the corresponding annual list.
