Il publie le Guide MICHELIN et des sélections de restaurants pour les régions couvertes[^guide]. ## Origines du guide Le guide a d’abord été conçu pour encourager les automobilistes à prendre la route. Il proposait des cartes et des informations pratiques, par exemple sur le changement d’un pneu et le ravitaillement en carburant, ainsi que des adresses où manger ou dormir. Les premières éditions étaient gratuites. En 1920, le guide est devenu payant ; il a alors classé les hôtels et restaurants par catégories à Paris et supprimé les publicités payantes[^guide]. ## Évaluation des restaurants Avec l’importance croissante de sa rubrique consacrée aux restaurants, le guide a commencé à envoyer des inspecteurs anonymes dans les établissements. Les premières étoiles ont été attribuées en 1926 aux restaurants de haute cuisine, d’abord avec une seule étoile. Une hiérarchie de zéro à trois étoiles a été instaurée en 1931 et les critères ont été publiés en 1936[^guide].
