    "body": "## 概述\n\n襄阳大头菜俗称“咸菜”，相传为诸葛亮隐居襄阳隆中时所创，民间素有“诸葛菜”“孔明菜”之美称，是襄州区地方特产，也是中国四大名腌菜之一。[^s1]\n\n## 工艺\n\n大头菜采用“三腌、五卤、六晒”的独特工艺：芥菜采回后削根去叶，经选料、初晒、拌料、复晒、加料、密封、腌制七道工序，反复使用老卤。加工后的大头菜只剩原重量的四分之一，表皮酱黑、外挂盐霜，内里棕红发亮，甘咸适中；凉拌清香爽脆，与肉丝同炒或与五花肉焖蒸则酱香浓郁。[^s2]\n\n## 非遗\n\n襄阳大头菜的腌制技艺为湖北省级非物质文化遗产代表性项目。[^s1]\n\n[^s1]: 湖北日报《我爱“非遗”》。\n[^s2]: 襄阳宣传《舌尖上的襄阳非遗》。",
