# 順徳料理

順徳料理は広東料理の重要な源流の一つで、「食は広州にあり、厨は鳳城より出づ」と言われる。魚、米、乳、家禽、花を主な素材とし、清・嫩・爽・滑・真を重んじる。2014年に順徳はユネスコの「美食之都」に認定された。

順徳料理は広東料理の重要な源流であり流派の一つである。民間に「食は広州にあり、厨は鳳城より出づ」ということわざがあり、鳳城は順徳大良の旧称である。2014年12月1日、順徳はユネスコ創造都市ネットワークに加盟し「美食之都」の称号を得た。成都に次ぐ中国二番目の都市である。[^s1][^s2]

## 特徴

順徳料理は素材の幅が広く、とりわけ魚、米、乳、家禽、花の五つが際立つ。味は清・嫩・爽・滑・真に代表され、淡すぎず、鮮やかで嫩らかく、素材そのものの味を保ち高めることを重んじる。[^s1]
