    "body": "順徳魚生は順徳を代表する伝統料理で、古くは「魚膾」と呼ばれ、古代南越人の生食の習慣を伝えるものとされる。清初の屈大均『広東新語』は広東人が魚の生食を好むと記し、その切り身を「紅肌白理、軽く吹けば起ち、薄きこと蝉の翼のごとし」と称えた。[^s1]\n\n## 作り方\n\nふつうソウギョを用い、清水で数日養って身を締める。頸の下と尾を切って血抜きし、三枚に下ろして薄切りにし、皿に並べる。食べるときにピーナッツオイル、塩、砂糖、ニンニクの薄切り、ネギ、炒りピーナッツ、ゴマ、レモンリーフの細切りなどを加えて混ぜる。広東語の「撈起」は混ぜる意味とともに「出世する」の意も掛けており、食卓では「魚生撈起、風生水起」と唱える。[^s1][^s2]\n\n[^s1]: 順徳Plus「順徳魚生の『前世今生』、原來有那麼多故事！」。\n[^s2]: 佛山市順徳区均安鎮人民政府「魚生」。",
