Amâlia is a modern-cuisine restaurant located at 32 rue de la Fontaine-au-Roi, Paris[2].

Overview

Unlike many addresses in eastern Paris, this restaurant has chosen classical elegance: a pared-back setting, white tablecloths and precise service. Italian partners Cecilia Spurio (pastry) and Eugenio Anfuso (kitchen) are veterans of starred houses; the chef's modern menu is punctuated with transalpine touches, such as spider crab with burrata, guanciale, Piedmont hazelnuts and jalapeño, or cacio e pepe ravioli with a molten pecorino romano heart, sage morels and fava beans. A superb vegetarian menu is also on offer, and at the end of the meal the pastry chef dares explosive flavour pairings such as horseradish, coconut and rocket. The restaurant is listed in the MICHELIN Guide France 2025 with one star. [1][2]

Signature Dishes

Recommended dishes include "araignée de mer à la burrata, guanciale, noisettes du Piémont et jalapeño" and "raviolis cacio e pepe au cœur coulant de pecorino romano, morilles à la sauge et fèves" [2].
