Joia is a vegetarian restaurant at Via Panfilo Castaldi 18, Milan, with the MICHELIN Guide listing its cuisine as Vegetariana, Cucina di stagione. [1]
Overview
Entering Joia is like stepping into a world suspended between philosophy and taste. It was the first house in Italy to bring vegetarian and natural cuisine into high-end dining, and every detail speaks of respect, awareness and harmony. Today, under the young chefs Sauro Ricci and Raffaele Minghini, Pietro Leemann's legacy lives on in dishes that resemble works of art. Two tasting menus structure the experience, while at lunch the "Piatto Quadro" offers five tastings for a quick yet refined break. [1]
Dishes & Highlights
The dish names alone are evocative—"Col favore della luna", "Ombelico del mondo", "La rosa che non colsi"—speaking through vibrant colors, delicate textures and scents that engage the senses. The vegetarian cuisine uses no eggs and no cheeses made with animal rennet; the kitchen works with selected small producers and builds the menu around seasonal availability, foraging herbs and flowers in the woods in spring and using leaves, stems and other plant parts for broths and fermentations.
