Sola is a creative and Japanese-cuisine restaurant at 12 rue de l'Hôtel-Colbert in Paris's 5th arrondissement, close to the Seine quays facing Notre-Dame. [1]
Overview
The décor plays on contrasts: zen-like light wood set against a French-style ceiling and heavy solid-wood doors. In the basement, a vaulted stone cellar houses a Japanese salon (shoes must be removed). Japanese chef Kosuke Nabeta builds a delectable bridge between the rigor and precision of Japanese gastronomy and the riches of the French terroir, skillfully wielding traditional techniques — smoking, drying, marinating, fermentation, alternative cooking methods — with ingredients such as soy, saké, ponzu and mizuna. A harmonious, refined and personal cuisine. [1]
