Holbox

Holbox is a beloved counter inside Mercado La Paloma in Los Angeles. Chef Gilbert Cetina, who previously cooked with his father at the neighbouring Chichen Itza stall, draws on the coastal cuisines of Mexico. Holbox was included among the one-star restaurants in the MICHELIN Guide California 2025 and is also listed with one star in the 2026 guide. [2][1][3]

The dishes look simple but deliver remarkable flavour, with seafood of exceptional quality and freshness. Highlights include vibrant aguachiles and ceviches, excellent tacos served on house-made heirloom corn tortillas, and expertly grilled lobster, all complemented by a range of distinctive house salsas. The menu changes frequently. A reservation-only tasting menu is offered on Wednesdays and Thursdays and is in high demand. [2]
