Shunde cuisine is one of the major sources and branches of Cantonese cooking. The saying "eat in Guangzhou, cook from Fengcheng" refers to Fengcheng, the old name of Daliang in Shunde. On 1 December 2014 Shunde joined the UNESCO Creative Cities Network as a City of Gastronomy, the second Chinese city after Chengdu to receive the title.[1][2]
Characteristics
Shunde cooking draws on a wide range of ingredients, with fish, rice, milk, poultry and flowers the most distinctive. Its flavours are described as clear, tender, crisp, silky and true: light without being bland, fresh and tender without being coarse, always keeping and lifting the taste of the ingredient itself.[1]
